武汉热干面地方标准“出锅” 8种调料缺一不可

楚天都市报消息（记者张乐克通讯员高雅）有百年历史的武汉名小吃热干面，终于拿出了一套地方标准。昨日户部巷、李记、蔡林记等70多位武汉热干面“手艺人”，在省质监局拿到热干面省级地方标准。

标准首次对热干面作出定义，并对主辅原料的数量、种类、质量卫生做了明确规定。根据该标准定义的热干面，必须添加芝麻酱、麻油、酱腌菜、酱油、食用盐、胡椒粉、味精、醋8种调味料。当面条和调料拌匀后，外观应呈酱褐色。

标准起草小组成员之一，农业部食品质检中心（武汉）专家李书谦称，热干面标准还首次提出碱水面的PH值（酸碱综合度）应不大于10。对于芝麻酱真假鉴别问题，该标准提出，添加的芝麻酱必须符合国家行业标准（SB/T10260）要求。
